They have a cream-colored flesh, unlike the more common orange hue, and are not as sweet and moist as other sweet potatoes. White sweet potatoes are an excellent source of vitamin C, vitamin B2 and B6, vitamin E.
They provide dietary fiber, potassium, copper, manganese and iron and are low in fat.
White sweet potatoes can be roasted, baked, grilled or smashed like all other sweet potatoes. They can also be used to make a good substitute for French fries because of their drier and low moist texture.
